Dear Friends and Family, the pledge time has ended for my Kickstarter cookbook campaign, and although I was unable to complete my Kickstarter $$ goal (you don’t get any $$ from the pledges unless the goal is reached), I have learned a lot from this Kickstarter campaign. Hola everybody, hope you are enjoying your easter weekend! Or Semana Santa as we call it in Mexico. Today this garlic free pesto goes out to a dear friend that has allergies with all kinds of nuts (except macadamia), veggies, garlic and onions, wheat, corn and other allergens related to his disorder: IBS (Irritable Bowel Syndrome). I’ve thought about the importance of creating menus for people that have allergies. I want to show that with proper use of spices, vegetables, and cooking methods, you can still enjoy a delicious and creative meal and I am more than happy to showcase that in my recipe index. I have been a vegetarian since birth, and my father who is an acupuncturist, and mother, a nurse; raised my sister and I in Ashrams, where we traveled, practiced bhakti yoga, and cooked lots of vegetarian cooking. Traveling and living in both Mexico and India I grew up eating plenty of Indian and Mexican cuisine. This vegetarian pyramid is an example of how we grew up balancing our vegetarian diet with beans, grains, vegetables, nuts, dairy..etc.
